firstdawn_shiraz_2007_LargeTraditionally the final growing period of the vineyards in the Berg River valley are rain free, excessively hot with mild humidity and cool nights. On the estate we could not have wished for better conditions. The stressed vines during the day found relief overnight to produce the fine fruit flavours characteristic of the First Dawn vineyard harvest. Fruit for the vintage was selected and harvested on February 7th. with average tests at 25.30B, pH of 3.86 and a TA of 3.92.

This vintage, the first to be fully processed in the new winery on the Estate, with all functions being done under supervision of our Winemaker, Mark Carmichael-Green. The result has truly indicated the passion applied in making our own wine.

The fruit gathered was destalked and further selected by berry for processing. The ultimate young wine was matured in first and second fill French oak barrels. After ten months in wood and regular racking the product was bottled for further maturation.

The initial flavours were extremely complex and typical of a classic Shiraz with strong vanilla flavours. Since bottling, the wine has rapidly developed into an extremely mature full bodied product with magnificently soft tannins and complex flavours.
