firstdawn_shiraz_2007_LargeClimatically the final growing period of the vineyards was almost perfect with excessively hot days placing the vines under severe stress, but the cool nights permitted a natural relief to develop the intense flavours of the perfect wine. Harvest of the vineyard was late in February, with only the perfect fruit being selected.. Tests were 25.30B, at a pH of 3.86 and TA of 3.92.

This vintage, the first to be fully processed in the new winery on the Estate, with all functions being done under supervision of our Winemaker, Mark Carmichael-Green. The result has truly indicated the passion applied in making our own wine.

The fruit gathered was destalked and again selected for processing. While the fermentation process was zealous, the ultimate young dry wine was matured in first and second fill French oak barrels. Following regular racking and ten months in wood the product was bottled for further maturation.

The initial flavours were just a stunning Cabernet Sauvignon. Since bottling, the wine has rapidly developed into a talked about product with a full body and magnificently soft mystical flavours. To identify any specific aroma would do the wine an injustice.
